Ingredients:

  • 1/3 cup granulated sugar
  • 6 tablespoons unsalted butter, melted

  • 4 large egg yolks
  • 1 can (14 ounces) sweetened condensed milk
  • 2/3 cup key lime juice (freshly squeezed if possible)

For the Topping:

  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract

 

Directions:

  1. Preheat oven to 350°F (175°C).
  2. For the Crust: Combine graham cracker crumbs, sugar, and melted butter in a bowl. Press the mixture firmly into a 9-inch pie plate, going up the sides. Bake for 10 minutes, then cool on a wire rack.
  3. For the Filling: Whisk egg yolks in a medium bowl until light and fluffy. Gradually whisk in sweetened condensed milk, then key lime juice until smooth. Pour into the cooled crust.
  4. Bake for 15 minutes, or until the filling is set. Cool completely, then refrigerate for at least 3 hours.
