Orange Creamsicle Mimosas

Ingredients:

1 bottle of champagne or prosecco, chilled
1 cup orange juice, chilled
1 cup vanilla ice cream
1/2 cup heavy cream
1 tablespoon powdered sugar
1 teaspoon vanilla extract
Orange slices for garnish
Sugar for rimming the glasses (optional)

Instructions:

Prepare the Glasses:
If desired, rim the glasses with sugar. To do this, dip the rim of each glass in a bit of orange juice, then dip it into a plate of sugar to coat the rim.
Make the Vanilla Cream:
In a medium bowl, whip the heavy cream with the powdered sugar and vanilla extract until stiff peaks form. Set aside.
Assemble the Mimosas:
Place a scoop of vanilla ice cream into each glass.
Pour about 1/4 cup of orange juice over the ice cream.
Slowly fill the rest of the glass with champagne or prosecco.
Add the Whipped Cream:
Top each mimosa with a generous dollop of the prepared vanilla whipped cream.
Garnish:
Garnish each glass with an orange slice on the rim.
Serve Immediately:
Serve the mimosas immediately while they are still bubbly and cold.
