Ingredients:

For the Crust:

  • 1 cup graham cracker crumbs
  • 2 tablespoons sugar
  • 3 tablespoons unsalted butter, melted

For the Cheesecake Filling:

  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream

For the Topping (optional):

  • Fresh berries, chocolate shavings, or fruit preserves

  1. Preheat oven to 325°F (165°C). Line a muffin tin with paper liners.
  2. For the Crust: Mix graham cracker crumbs, sugar, and melted butter until well combined. Press about a tablespoon of the mixture into the bottom of each muffin cup. Bake for 5 minutes, then remove from oven.
  3. For the Filling: Beat cream cheese and sugar in a large bowl until smooth. Add eggs one at a time, beating just until blended. Stir in vanilla and sour cream.
  4. Divide the filling evenly among the crusts in the muffin cups, filling each about 3/4 full.
  5. Bake for 20-25 minutes, or until the centers are just set. Cool in pan on a wire rack for 15 minutes. Chill in the refrigerator for at least 2 hours.
  6. Before serving, top with your choice of fresh berries, chocolate shavings, or fruit preserves.
